Light, Medium, Dark: Choosing the Right Roast to Fuel Your Day (or Night)

In your line of work, the clock is just a suggestion. Whatโ€™s not a suggestion is the need to be sharp, focused, and ready for whatever the shift throws at you. Before the boots go on, before the briefing, before you even step foot on the line, thereโ€™s a ritual. Choosing the right roast can be the difference in just getting thought the day, or enjoying the day. Monday to Friday Difference

That ritual is the first cup of coffee.

For many of usโ€”Correctional Officers, veterans, first respondersโ€”that cup isn’t a luxury. Itโ€™s standard-issue equipment. Itโ€™s the fuel that gets the engine started. But for too long, many of us have settled for “hot and there.” We drink whateverโ€™s in the pot, no questions asked, as long as itโ€™s hot and has caffeine.

Coffee and work sometimes things just go together. Choosing the right roast makes the difference between Monday and Friday work!

But what if that cup could be more? What if it could be a tool, perfectly suited to the task at hand? What if understanding your coffee was as important as breaking down your equipment?

Welcome to the world of craft coffee roasts. Understanding the difference between a light, medium, and dark roast isn’t just for baristas in fancy cafes. Itโ€™s a practical skill. Itโ€™s about knowing your drink. Itโ€™s about choosing the right tool for the job.

Your work is demanding. Your coffee should be reliable. Let’s break down the roasts so you can find the perfect one to fuel your watch.

The Great Caffeine Myth: Busted

Before we dive in, letโ€™s clear the air on one of the biggest misconception in the coffee world.

Myth: “Dark roast has more caffeine and is ‘stronger’.”

Truth: This is, unequivocally, false.

Caffeine is a very stable compound. The roasting process, which applies heat to the green coffee bean, doesn’t significantly “burn off” the caffeine. Here’s the real difference:

  • Light Roast Beans are roasted for less time. They are denser and smaller because they havenโ€™t expanded as much or lost as much moisture.
  • Dark Roast Beans are roasted longer. They are larger, lighter in weight, and less dense.

So, if you measure your coffee by the scoop (volume), you are actually fitting more dense light-roast beans into that scoop. This means a cup of light roast coffee, measured by the scoop, will almost always have more caffeine than a cup of dark roast.

If you measure by weight (e.g., 20 grams on a scale), the caffeine content will be almost identical.

The “strength” you associate with a dark roast isn’t caffeine; it’s the flavor. Itโ€™s the bold, smoky, and often bitter taste from a long roast. Don’t confuse flavor intensity with chemical potency. If you’re drinking a dark roast purely for the jolt, you might be getting the opposite of what you want.

It Starts at the Source: Know Your Bean

Before a bean is ever labeled “light” or “dark,” its character is defined by where and how it was grown. You can’t roast quality into a bad bean. Thatโ€™s why weโ€™re transparent about where our coffee comes from. It’s not a random, faceless blend from a dozen countries.

All our coffee is single-origin, hailing from the Minas Gerais region of Brazil. We source from four specific farms: Boa Vista, Fazenda Furnas, Mato Cipo, and Apostolo Simao.

Why does this matter?

  • Consistency: Single-origin means you get a reliable, consistent cup every time.
  • Quality: This coffee is grown at a high elevation 3,600ft above sea level (1100 MASL, or Meters Above Sea Level) and “processed naturally”. This natural process means the bean dries inside the coffee cherry, which imparts a fuller body and often a natural, fruity sweetness.
  • Integrity: We donโ€™t just buy coffee; we buy it with purpose. This coffee was purchased using Bellwetherโ€™s Living Income Pricing benchmark. That’s a formal way of saying we ensure the producers are paid a fair, sustainable price. By choosing this coffee, you are helping to interrupt poverty at the farm level by paying a price that closes the living income gap.

Our mission of support starts at the very beginning of the supply chain. From there, we take these exceptional beans and apply our craft.

Decoding Coffee: Choosing the Right Roast

Let’s walk through the “big three” roasts, what they really mean, and how our lineup is tailored for you

Lieutenants Light

A light roast is all about the bean. The roasting process is stopped just after the “first crack” (a sound like popcorn popping), preserving the bean’s original, nuanced flavors.

The Experience: Don’t think “weak.” Think “bright.” Think “clean.” A light roast is vibrant, often with a pleasant acidity (not sourness, but a crispness, like a green apple). It has a lighter body, or “mouthfeel.”

Who Itโ€™s For: This is for the person who needs clean, focused energy. It’s the coffee for writing detailed reports, for the long debrief, or for that first cup of your “day” (even if it starts at 9 PM) when you need to be alert and clear-headed. Itโ€™s a scalpel, not a hammer.

Lieutenants Light

Lieutenants Light

For the moments that demand sharp focus and quick decisions, choose our Light Roast. Lieutenants Light is bright, clean, and refreshing. Roasted Fresh for Each Order

We named it for the precision and clarity it brings.

  • Tasting Notes: Honey, Citrus Fruit, Cocoa, Almond.
  • Decoding the Notes:
    • Honey & Citrus Fruit: This is that bright, clean taste. You’ll get a gentle, natural sweetness (the Honey) upfront, followed by a crisp, clean finish (the Citrus Fruit). It’s refreshing and sharp.
    • Cocoa & Almond: This is the base. Itโ€™s what keeps the coffee from being too bright. The Almond note gives it a smooth, nutty foundation, while the hint of Cocoa provides a balanced, satisfying finish.

The Verdict: Choose Lieutenants Light when you need the bright, clean caffeine for a long, mentally-taxing shift. Works best as a black coffee or very little added to it.

Guards Grounds

This is the all-American classic, the perfect balance point. A medium roast is taken past the first crack, allowing the bean’s natural sugars to begin to caramelize. It dials back the bright acidity of a light roast and brings forward a new depth of flavor.

The Experience: Smooth, balanced, and full-bodied. This is the coffee thatโ€™s “just right.” It has enough origin character to be interesting and enough roast character to be comforting and familiar. It’s the ultimate “all-day” (or “all-night”) coffee.

Who Itโ€™s For: This is the reliable partner. It’s the pot you brew for the whole team in the briefing room. It’s agreeable, dependable, and gets the job done without shouting about it. Itโ€™s the cup you grab at 0200 (2:00 a.m.) when you hit the halfway point and need a steady, reliable boost.

Guards Grounds

Guards Grounds

The reliable, balanced cup for the men and women who hold the line. Guards Grounds is smooth and consistent. Roasted Fresh for Each Order

Named for the reliable, steady presence that holds the line.

  • Tasting Notes: Caramelized, Cherry, Nutty, Cocoa.
  • Decoding the Notes:
    • Caramelized: This is the star of a good medium roast. The bean’s sugars have been roasted to the point of turning into caramel, giving the coffee a deep, rich, satisfying sweetness that isn’t sugary.
    • Cherry & Nutty: This is the complexity. The Nutty notes (think pecan or walnut) give it a full, rounded body. The Cherry isn’t a sour, bright fruit; it’s a deep, dark fruit note that balances the sweetness.
    • Cocoa: This is the classic, comforting finish. It ties everything together with a familiar, smooth chocolatey base.

The Verdict: Choose Guards Grounds when you need a dependable, smooth, and satisfying cup that everyone can agree on. It’s the workhorse of your shift.

Captains Coffee

This is what most people think of when they say “strong coffee.” A dark roast is taken to or just into the “second crack.” The heat has broken down the bean’s origin flavors and replaced them with the deep, bold flavors of the roast itself. The bean’s natural oils are often brought to the surface, giving the beans a visible sheen.

The Experience: Bold, heavy, and intense. The body is thick and full. The flavors are all about the roast: smoky, toasty, and rich, with a low acidity and a lingering finish.

Who Itโ€™s For: This is for the traditionalist. The person who wants a no-nonsense, bold, in-your-face cup. This is the coffee that stands up to a splash of cream or a bit of sugar. Itโ€™s the cup you want when youโ€™re midway through 16-hour double and you need something that cuts through the fatigue. Itโ€™s a cup that stands its ground.

Captains Coffee

Captains Coffee

This is the cup for the leader standing the watchโ€”a rich, full-bodied Dark Roast crafted for focus and endurance. Captains Coffee hits hard. Roasted Fresh for Each Order

Named for the bold, commanding presence that leads from the front.

  • Tasting Notes: Dark Chocolate, Nutmeg, Cocoa, Molasses.
  • Decoding the Notes:
    • Dark Chocolate & Cocoa: This is the dominant flavor. Itโ€™s not sweet milk chocolate; it’s the rich, slightly bitter (in a good way) flavor of a 70% cacao bar. Itโ€™s robust and powerful.
    • Nutmeg & Molasses: This is the depth. The Nutmeg adds a warm, spicy undertone that cuts the richness. The Molasses provides a dark, syrupy sweetness that is heavy and lingers on your palate.

The Verdict: Choose Captains Coffee when you want a classic, bold, and powerful cup that makes a statement. Itโ€™s the definitive, no-surrender fuel for the toughest parts of your day. This roast stands up best to adding milk and sugar.
